Low fuss meals don’t mean you have to compromise on flavour and nutrients. This meal took 5 mins to prep and it was delicious! Meatballs that are loaded with vegetables and cooked in a tomato and herb sauce, served with rice or pasta.
MEATBALL RECIPE:
Ingredients:
– 500g minced beef
– 1/4 cup olive oil
– 1 onion finely diced
– 1 carrot, grated
– 1 zucchini, grated
– 2 tsp fresh minced garlic
– 2 tsp dijon mustard
– 1/4 bunch fresh parsley, or 2 tbsp dried herbs
– 1/2 teaspoon fresh cracked black pepper
– 1/2 teaspoon chilli flakes, optional
– 1 tin crushed tomatoes
– 1/2 jar passata
– 1/2 bunch fresh parsley
– 1 tbsp chilli flakes
– 1 tbsp fresh oregano
– 1/4 bunch fresh basil
– Can substitute fresh herbs for dried.
Method:
1. Combine mince, oil, onion, carrot, zucchini, garlic, mustard, parsley, pepper and chilli together in a bowl. Mix well. Roll into small balls.
2. Heat olive oil in large pan on medium high heat. Add meatballs in, brown on all sides.
3. Turn heat down, add tinned tomatoes and passata, chilli flakes and fresh herbs.
4. Simmer for 20-30 mins. Cook rice or pasta.
5. Serve meatballs on top of rice or pasta.
