Protein Pancake Muffins

Pancakes are delicious,m however can be time consuming to make in the morning. This is why I make them into pancake muffins, They are a perfect option for a grab and go lunch as well as a quick afternoon snack to get you through the day. As an added bonus you can make them in any flavour you like with various toppings. Favourites of mine are chocolate chip or white choc and raspberry.

If you want to make pancake follow the recipe and cook them in a pan. Otherwise enjoy ease of muffins.

Ingredients:

– 1/2 cup protein powder
– 1 cup plain flour (or flour of choice)
– 2 tsp baking powder
– 1 egg
– 1 tsp vanilla paste
– 1 tbsp monkfruit sweetener
– 1 cup of milk (milk of choice)
– 1/2 small banana mashed (optional)


Method:

1. Preheat oven to 180℃. Grease muffin pan.

2. In a small mixing bowl combine the protein powder, flour, sweetener and baking powder.

3. In separate bowl combine milk, egg, vanilla and banana if using.

4. Make a little well in the center of dry ingredients and pour wet ingredients in. Stir well till combined.

5. Pour in your pancake batter into muffin pan and top with choice if toppings, e.g. choc chips, raspberries or blueberries.

5. Cook in oven for 12-15 mins or until skewer comes out clean.
