A favourite meal of mine is Lamb Koftas. I also love pairing it with homemade flatbread.
Which take all of 5 minute to make. What I love about the koftas is that I can double the recipe and freeze half of it for future use when I am in a rush for something.
KOFTAS
INGREDIENTS
– 500g lamb mince
– 4 tablespoons sumac
– 2 heaped tablespoons of dried oregano
– 1 level tablespoon dried chili flakes
– 1 level tablespoon ground cumin
– sea salt and freshly ground black pepper
– 1 egg (or a splash of olive oil if egg intolerant)
METHOD
1. Combine all ingredients in a bowl mix together well.
2. Roll into 8 koftas balls.
3. Heat frying pan with olive oil.
4. Fry koftas until cooked on medium heat.
5. Serve with salad, or in a wrap.
FLAT BREAD
INGREDIENTS
– 1 cup Greek yoghurt
– 1 cup place flour
– 1 teaspoon salt
METHOD
1. Combine all ingredients in a bowl
2. Mix until forms a dough. May need to add more flour or yoghurt to get the right consistency.
3. Let rest for 10-15 minutes.
4. Once rested, cut into 3 to 4 even balls.
5. On a floured surface roll each ball out about 3 mm thin.
6. Heat pan with olive oil to medium heat.
7. Fry each flat bread for 2 mins each side.
Note: can add garlic and herbs into dough for flavour.
