Chocolate & Raspberry Donuts

Who doesn’t love donuts. I was really craving donuts one afternoon and I wanted to make them but not have them loaded with sugar. Also not wanting them to taste ‘healthy’.

The recipe can be altered to create a variety of flavours. It’s a quick and simple option for work, school lunch boxes and even for dessert after dinner.

DONUT RECIPE:

Ingredients:
– 1 cup plain flour
– 1/4 cup cacao powder
– 1 tsp baking powder
– 1/4 cup monkfruit sweetener
– 1/2 tsp salt
– 1 tsp vanilla paste/extract
– 1/2 cup milk of choice
– 1 egg
– 2 tbsp oil (olive, coconut or butter)
– 1/2 cup frozen raspberries

Method:

1. Preheat oven to 180°C.

2. Combine flour, cocoa, baking powder, sweetener and salt in a large bowl 

3. In a small bowl whisk together milk, vanilla, egg and oil. 

4. Add the wet ingredients into the dry ingredients, stir well to combine. Add in raspberries.

5. Grease donut pan. Divide mixture evenly between the 6 donut rings in the pan. *if you don’t have a donut pan, you can use a mini muffin or regular muffin pan.

6. Bake in oven for 10-12 mins.
