We love curry night in our house. We also love using the slow cooker so the obvious answer is butter chicken in the slow cooker.
I tell you what, it is a winner. Putting it on in the morning before heading off to work or even whilst you are home and knowing your dinner will be done later.
RECIPE
Ingredients:
– 4 chicken thigh fillets, whole
– 1 brown onion, diced
– 4 cloves garlic, crushed
– 3 cm knob ginger, grated
– 2 tbsp tomato paste
– 500ml stock or bone broth
– 1 tbsp garam masala
– 8-10 cardamom pods
– 2 tbsp cumin
– 1 tbsp paprika
– 1/2 tsp chilli powder
– 1 tsp turmeric
– 2 tsp ground coriander
– 1 tsp cinnamon
– 150ml coconut milk
– Greek Yoghurt to serve
– Fresh Coriander to serve
Method:
1. Add chicken fillets, onion, garlic, ginger, tomato paste, stock and all spices into a slow cooker.
2. Cook on low for 6-8 hours.
3. Add in coconut milk and stir, turn off slow cooker.
4. Serve with rice, yoghurt, coriander and choice of roti or naan.
